Updated: 11 hours ago

Looking for something a little different to serve during the holidays? These garlic and herb butter steak bites are easy enough for a weeknight but impressive enough to put out when company comes over.
Serves: 4 as an appetizer
Prep Time: 10 minutes
Cook Time: 10–15 minutes
Ingredients
1½ lbs. flat iron steak, cut into bite-sized pieces
2 tbsp. olive oil
3 tbsp. unsalted butter
4 cloves garlic, minced
1 tbsp. fresh rosemary, finely chopped
1 tbsp. fresh thyme leaves
Kosher salt and freshly cracked black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
Pat the steak pieces dry with paper towels and season generously with salt and pepper.
Heat olive oil in a large cast-iron skillet over medium-high heat until hot.
Add steak in a single layer, working in batches to avoid overcrowding. Sear for approximately 1–2 minutes per side, depending on the size of the pieces and your preferred doneness.
Reduce heat to medium-low. Return all steak pieces to the skillet and add butter, garlic, rosemary and thyme.
Toss for about 30–60 seconds, until the butter is melted and the garlic is fragrant. (Be careful, garlic burns easily!)
Remove from heat, garnish with fresh parsley, and serve immediately.
Serve with toothpicks as a holiday appetizer, or alongside roasted potatoes and vegetables for a full meal.

Butcher's Tip: Don't skip drying the steak before it hits the skillet. Moisture is the enemy of a good sear. And if you're cooking for a crowd, work in batches rather than piling everything into one pan.
