A great smash burger is all about contrast: crispy edges, juicy beef, soft buns, and layers of rich flavor packed into every bite. When made with high-quality ground beef and cooked on a ripping hot griddle, smash burgers become something special.
This elevated version pairs deeply caramelized onions with melty cheese and a simple truffle aioli for a burger that feels indulgent without being complicated. They’re perfect for summer cookouts, weeknight dinners, or casual entertaining.
Ingredients
1 tsp kosher salt 1 tsp cracked black pepper
1 large yellow onion, thinly sliced
1 tbsp butter
4 brioche buns
4 slices sharp white cheddar or gruyère cheese
1 tbsp neutral oil
Truffle Aioli
½ cup mayonnaise
1 tsp truffle oil
1 garlic clove, finely grated
1 tsp lemon juice
Pinch of salt
Optional: arugula, pickles, or crispy shallots for serving
Instructions
Heat a skillet or flat-top griddle over medium-low heat. Add butter and sliced onions and cook slowly, stirring occasionally, until deeply golden and caramelized, about 25–30 minutes.
Meanwhile, combine mayonnaise, truffle oil, garlic, lemon juice, and salt in a small bowl to make the aioli. Refrigerate until ready to use.
Divide the ground beef into four loosely packed balls. Do not overwork the meat.
Increase the heat on the griddle or skillet to high. Add neutral oil.
Place the beef balls onto the hot surface and immediately smash them thin using a sturdy spatula or burger press. Season with salt and pepper.
Cook for 2–3 minutes until the edges become crisp and browned. Flip once, top with cheese, and cook for another 1–2 minutes until melted.
Lightly toast the brioche buns on the griddle.
Spread truffle aioli on the buns, then layer with smash burgers and caramelized onions. Add optional toppings if desired and serve immediately.
Ready to level up burger night?
Butcher’s Tip: Don’t press the burgers repeatedly while cooking. Smash once at the beginning onto a very hot surface, then leave them alone long enough to build a crust. Overhandling the beef or pressing it repeatedly can squeeze out the juices and toughen the burger.
